Both, honestly — but for different jobs. A cast iron tawa wins on browning, high heat and lifespan, which is what phulkas, parathas and crisp dosas need. A non-stick tawa wins on weight, low-oil cooking and zero maintenance, which is what a weekday chilla or an omelette needs. The mistake is not choosing wrong; it’s expecting one pan to do both jobs well.

What Is a Cast Iron Tawa, and Why Does It Cook Differently?

Why does a cast iron tawa cook better than a normal one? Because of thermal mass, not conductivity. Cast iron is a mediocre heat conductor — roughly 50 W/m·K against about 200 for aluminium — but it stores a great deal of heat and gives it back steadily. Drop cold dough onto it and the surface temperature barely dips, which is why you get browning instead of steaming.

A thin aluminium non-stick tawa does the opposite. It heats fast and loses temperature the moment food hits it, then recovers. For a soft roti that’s fine. For the blistered spots on a phulka or the lacy crispness on a dosa, it isn’t.

Bare vs Enamelled Cast Iron Tawa: Not the Same Pan

Is an enamel cast iron tawa better than plain cast iron? They solve different problems. Bare cast iron needs seasoning and will rust if neglected, but it’s cheaper and it transfers dietary iron to food. Enamelled cast iron is a layer of glass fused onto the iron at high temperature — no seasoning, no rust, non-reactive with tomato and tamarind, and it does not transfer iron, because the glass is a barrier.

That last point is worth stating plainly, since almost nobody does: if you are buying a cast iron tawa specifically for the iron, enamelled is the wrong choice. The lifespan row is the one that changes the maths. A ₹700 non-stick tawa replaced every two years costs more over a decade than a ₹3,000 cast iron tawa bought once — and generates a pan’s worth of landfill each time.

Does a Cast Iron Tawa Really Add Iron to Your Food?

Does cooking in cast iron increase your iron levels? Sometimes, and less reliably than Indian cookware marketing suggests. It’s a fair question to ask here, because anaemia is a genuine public-health problem in India — NFHS-5 (2019–21) recorded 57% of women aged 15–49 and 67.1% of children aged 6–59 months as anaemic, both worse than the previous survey.

But the evidence for cookware as a fix is mixed. A 2019 systematic review in PLOS ONE (Alves, Saleh & Alaofè) examined 11 studies of iron-containing cookware in low- and middle-income countries. Among the eight iron-pot studies, only four showed statistically significant haemoglobin improvement. Broken down by population, positive results appeared in 50% of studies on children — but in only 28.6% of studies on females of reproductive age. The authors also flagged poor compliance, unmeasured confounders and the need for more research on iron-overload safety.

What that supports: cast iron can contribute dietary iron, especially with acidic, moist, long-cooked foods, and more so for children. What it doesn’t support: treating a tawa as an anaemia treatment. A roti spends ninety seconds on a dry surface — close to the worst-case scenario for iron transfer. If anaemia is the concern, that’s a conversation for a doctor, not a cookware purchase.

Is a Non-Stick Tawa Safe for Daily Roti?

Is non-stick tawa safe for daily roti? Regulators advise caution rather than avoidance. The ICMR/National Institute of Nutrition Dietary Guidelines for Indians (2024) recommended that Teflon-coated cookware not be heated beyond 170°C or left on a burner for long periods, and stressed replacing non-stick cookware once the coating starts to wear.

Indian manufacturers disputed the framing, arguing modern PFOA-free coatings are food-safe when used as directed — and within spec, that’s a reasonable position. Which Tawa for Roti, and Which for Dosa?

Can I use a cast iron tawa on an induction cooktop? Not always — and this trips up more buyers than any other spec. Cast iron is always ferromagnetic, but a classic roti tawa is slightly concave, so it never sits flush on an induction plate and won’t couple properly. Flat dosa tawas do.
