Desserts with Totapuri Mango

3 Homemade Frozen Desserts with Totapuri Mango

So it’s an afternoon like this where the fan doesn’t do much to cool you down. You turn to the freezer and stand there one minute to get the cold air. The more typical answer is to use the ice cream. However, if there are a few ripe mangoes in your kitchen, then you can create your own!

Totapuri isn’t a very sweet mango. It’s tangy and it’s perfect for frozen desserts. It is nicely balanced by milk, yoghurt and lime. Here are three recipes that you can try out.

It is best to begin with ripe mangoes.

The fruit can take care of a lot with just a few ingredients. The flavorful mango yields a flavorful dessert.

Check for these:

  • Fruity odour close to the stem
  • Yellow-green skin that gives a little when pressed
  • An unusually heavy mango for its size

Purchase fresh fruits from your local market or by online. When you’re already out for shopping groceries for the week, Instamart is one place to get your mangoes, milk and yoghurt all in the same basket. Simply see how ripe the mangoes are upon their arrival.

1. Ice pops come in an assortment of flavors, including tangy Totapuri mangoes.

It is the simplest of the three. No cooking is done. You stir, pour and wait.

Ingredients:

2 ripe totapuri mangoes
2 tablespoons sugar or honey
1/2 cup of lime juice
½ cup water

Method:

  1. Peel and chop the flesh of the mangoes.
  2. Blend until smooth.
  3. Taste it. Totapuri tends to be quite sour. So adjust to your taste by adding sweeteners.
  4.  Fill ice pop moulds. And freeze for approximately 6 hours.

The moulds should be under running tap water for a few seconds to loosen the pops. Add small chunks of mangoes to the freezer too. They add some bite.

Need a sorbet, try this one! Freeze the chunks of mango first. Mix them together without water and eat as soon as! Produces soft and scoopable product.

2. Mango Yoghurt Bark With Pistachios

When you’re looking for something cold, but not heavy, some evenings you need this! This bark does that.

Ingredients:

1 cup thick yoghurt
½ cup mango puree
1 tablespoon honey
Chopped pistachios
A couple of little mango slices

Method:

Combine yoghurt, puree and honey in a bowl and stir together.
2. Place on a sheet pan about 1 cm thick.
4. Sprinkle with the pistachios and mango pieces.
4. Freeze for about 4 hours.
5. Cut it into more or less chunks and serve.

Leftovers should be refrigerated in a sealed container in the freezer. Refrain from letting the pieces sit for long time. The yoghurt bark melts quickly during summer.

3. Creamy Mango Kulfi-Style treat.

This one requires more time since the milk needs to be reduced. The rich and creamy effect is rewarded.

Ingredients:

500 ml full-fat milk
1 cup mango pulp
3 tablespoons sugar
½ teaspoon cardamom powder
Chopped almonds

Method:

  1. Pour the milk into a heavy bottomed pan.
  2. Cook slowly with low heat. Stirring occasionally, until it has reduced in half.
  3. Allow to cool completely.
  4. Mix in the pulp, sugar, cardamom and almonds.
  5. Fill in kulfi moulds and small cups. Then freeze overnight.

Dip the mould in warm water before serving. The kulfi should slide out easily.

Small Tips That Help

  1. Cool food prior to use.
  2. Before adding sugar, taste the mango pulp.
  3. Keep desserts covered in the freezer to avoid freezer odors.
  4. Use ripe mangoes. They don’t freeze well (they will sour if you freeze them before they are ripe).

Organize your ingredients before you start cooking.

It is not necessary to have a long list. Almost everything above is covered by mangoes, yoghurt, milk, nuts, cardamom and limes.

Before shopping groceries online, take a look at your kitchen. You might already have part of this. Instamart can fill-up the gaps, but do not keep buying ripe mangoes than can be consumed in few days. They spoil quickly.

You only need to choose one, so get started!

Making frozen desserts at home doesn’t have to be fancy. Sometimes just a simple mango ice lolly is enough. Other days you may want to make kulfi for the family.

Select any recipe you are interested in. These are some great uses of seasonal fresh fruits from all three. And it’s really nice to get into the freezer to see you have something you made yourself.
